She asked, what kind of food do you think of when it comes to meat dishes? She said there are many different types of meat dishes, including chicken, pork, and beef. She said I like chicken among them. She said that Kumamoto is famous for a local chicken called Amakusa Daiou. She said she would like to introduce us to Amakusa Daiou.
She said, first, I would like to talk about Amakusa Daiou. She once said that Kumamoto was bred with one of the largest chickens in Japan called "Amakusa Daiou" and was highly prized mainly for "Mizutaki in Hakata" because of its deliciousness and good meat quality. However, she said that it was unfortunately extinct in the early Showa period due to the fact that it was a large species with a low egg production rate and the spread of imported species that also serve as egg meat. After that, there was no end to the desire to restore "Amakusa Daiou," who has a reputation for good meat quality and usability. Therefore, she said that Amakusa Daiou was restored after a long period of 10 years at the Kumamoto Prefectural Agricultural Research Center. She said that the rooster is the largest, 90 cm tall and weighs about 7 kg, and is characterized by its imposing personality. She said that Amakusa Daiou has been cultivated on a designated farm in a relaxed and devoted manner, taking more than 120 days, twice as much as usual.
She said that Amakusa Daiou's flesh is not too hard and not too soft, and is characterized by its exquisite texture, elasticity and juiciness. She also said that it has a slight sweetness and richness but no stubbornness or habit, and once eaten, its taste is vivid and memorable. She said that Amakusa Daiou has a very large body and is one of the largest in Japan, so not only is the meat abundant, but also all parts such as thigh meat, breast meat, and chicken meat can be used without waste. As a result, she said, it has gained high praise and popularity from professional cooks as an ideal ingredient in all aspects of taste and usability.
She said that Amakusa Daiou can be deliciously eaten by tapping, oyakodon, teriyaki, fried, and skewered in addition to mizutaki. She said that there are many stores in Amakusa that use Amakusa Daiou. She said that Amakusa is currently hosting a fair for Amakusa Daiou and prawns. She said that various stores serve Amakusa Daiou cuisine. For example, there are mizutaki, fried chicken of Amakusa Daiou, mixed rice of Amakusa Daiou, and course dishes using Amakusa Daiou. She said she wanted us to go to Amakusa and eat Amakusa Daiou.
